China’s economy has grown dramatically during the past decade as the consumption of cold chain products such as fresh meats, aquatic products, frozen food, fruits, vegetables, and dairy products, matured. Not only is China one of the biggest agricultural countries in the world, the rise of an affluent middle class, open trade policies, and the improvement of cold chain infrastructure is resulting in a rapid increase in imported perishable food items.
